Panettone with semi-candied wild berries filled with mascarpone cream, no sultanas, no candied citrus peel. Naturally leavened bakery confectionery product.

Our panettone has a 72-hour processing time in which the most important stage is the refreshment of a yeast that will always keep itself alive. By working it with flour and water, we ensure that it remains reactive, giving the product softness and flavour.

Ingredients: wheat flour, mascarpone cheese filling cream 14,5% [glucose syrup, water, dextrose, sugar, mascarpone cheese 7% (milk cream, acidity regulator: citric acid], butter, skimmed milk powder, alcohol, flavourings, stabilizers: pectins, preservative: potassium sorbate, colouring agent: calcium carbonate), butter, sugar, eggs*, candied woodberries 12% [forest fruits 78% (currant- strawberries- blackberries- blueberries in variable proportion), sugar, acidifying: citric acid], egg yolk*, rehydrated whole milk powder, natural yeast (wheat flour, water), emulsifiers: mono- and diglycerides of fatty acids; glucose syrup, flavourings, salt, cocoa butter.
